ACKEE & SALTFISH

Dried Codfish, soaked in a bowl of cold water overnight

Can of Ackee, drained

Onion, finely chopped

Clove of garlic, crushed

Green peppers, seeded and chopped

Spring onions, chopped

Fresh red chilli, seeded and finely sliced

Tomatoes, skinned, seeded and chopped

Dried Thyme

Drain the codfish, place in a pan, cover with water and simmer for 15 – 20 minutes until tender.  Drain, remove skin and bones and flake flesh.  Set aside.

Heat oil in a frying pan and gently fry the onion, garlic, green pepper and spring onion for about 10 minutes until soft.

Add the red chilli, tomatoes and thyme and cook for about 5 minutes.

Add the Codfish and Ackee and heat through, stirring very gently.
