Dried Codfish, soaked in a bowl of cold water overnight

Can of Ackee, drained |

Green peppers, seeded and chopped |

Fresh red chilli, seeded and finely

Drain
the codfish, place in a pan, cover with water and simmer for 15 – 20 minutes
until tender. Drain, remove skin and
bones and flake flesh. Set aside. |

Heat
oil in a frying pan and gently fry the onion, garlic, green pepper and spring
onion for about 10 minutes until soft. |

Add
the red chilli, tomatoes and thyme and cook for about 5 minutes. |

Add
the Codfish and Ackee and heat through, stirring very gently. |
